Soup 23 – Pizza Soup

You may or may not have heard about about the latest craze to take over the soup scene, but it’s called Pizza Soup. I discovered it after reading about it in the Metro and thought I’d give it a go.

I don’t often eat pizza and when I do, I rarely admit to it. My main way of consuming it is one or two bites at a time from the ones my brother leaves in the fridge over a series of 3-4 nights and then blame it on a burglar. So hiding it within a soup, seemed like perfection. I thought I’d try something different this week as well and try out making a little video.

Recipe:
Serves 6

Ingredients
250g lardons (or smoked bacon)
2 large carrots
1 onion
2 cloves of garlic
3 tbsp tomato puree
1 tbsp of plain flour
2 tins of chopped tomatoes
900ml of chicken or veg stock
1 big tsp of thyme
200ml of double cream
Sliced chorizo or pepperoni
A mini french stick
Mozarella and cheddar grated (as much as you can handle!)

Method

  • Fry the lardons up nice a crispy. Add the carrots, onions and garlic in a pan for 5-10 mins.
  • Add the tomato puree and then flour to thicken
  • Once thickened, add in tomatoes, chicken/veg stock and thyme
  • Simmer for a further 25 minutes and then add cream
  • Blend
  • If you own oven proof soup bowls (fancy pants), you can add the bread and LOWDS of cheese to the soup and grill until browned
  • Add on any toppings you like. I chose chorizo.

Verdict

So, a health food this soup ain’t. It definitely feels like you’ve eaten a pizza after you’ve consumed. Really rich and creamy, it leaves a fine layer of grease throughout your mouth to remind you it stopped by before heading straight to the bottom of your stomach like a ton of fatty briquettes. Very easy to make, the only problem is you need over proof bowls to add the toppings and grill. If you don’t though, you can do it the way I did: a kind of cheese on toast style. In summary, if you judge this soup as a soup, it’s pretty disgusting. BUT, if you hold it to its initial brief a PIZZA SOUP, it’s definitely winning. If I could make it again, I think my heart would like me to would cut down the amount of double cream added.

Tastiness: 👅👅👅👅👅👅/10 – The tomato zing and chorizos made this soup
Complexity: 🤔🤔🤔🤔/10 – No problemo for soup beginners
Overall: 👌👌👌👌👌/10 – Fun to try but not going to make it into the regular repetoire
